Grown in Yame, Fukuoka Prefecture, on Japan's southern island of Kyushu. Yame produces less than 3% of Japan's total matcha output, but its teas consistently win top honors at national competition. The region's mountain fog, mild climate, and mineral-rich soil create growing conditions that concentrate flavor compounds in the leaf. Our leaves are shade-covered for 3 to 4 weeks before harvest to boost chlorophyll and L-theanine content.

This blend is made only from ichibancha, the first flush picked in late April and early May. First-flush leaves carry the lowest tannin load of the year, which is why Yame first harvest tastes naturally sweet instead of astringent, with the warm, nutty, chestnut-like character Fukuoka is known for.

Usucha: Sift 2g (1 tsp) into a warm bowl. Add 100ml of water heated to 80°C (176°F). Whisk briskly with a bamboo chasen in a W-motion until a fine layer of foam forms on top. Sip slowly and enjoy.

Lattes: Sift 3g (1.5 tsp), whisk with 60ml of water first, then pour over 1/2 cup milk of choice. Enjoy a creamy and flavorful latte that doesn't get "lost" in the milk.

Matcha is harvested several times per year. The first harvest (called ichibancha, picked in late April and early May) produces tencha leaves with the highest L-theanine content, brightest green color, and smoothest umami flavor. Later harvests are cheaper and have an unpleasant bitterness. We only sell first harvest.

You should also make sure you're using 160°F-176°F and not boiling water when whisking. 😊
